
Yesterday my goal in life was to make the Lemon Tart with Almond Crust from my Bakeshop Classics cookbook, page 101.

The girl got me all the ingredients we needed and even ordered a citrus juicer from Amazon so we could juice all the lemons ourselves.

The first thing we had to do is make the almond crust. The recipe said we needed to put the butter, sugar, flour and almonds in a food processor but we don’t have one of those so we used the Magic Bullet to combine.

It did a pretty good job but when it came to finishing the dough we had to transfer the ingredients to a bowl so I could stir it all together.

Then I had to mash the dough in a tart pan. Luckily the girl already had one of those!

I pressed it out neatly up to the edges and we put it in the oven to bake.

Then we got to use the citrus juicer which was really fun. I enjoyed juicing the lemons so much I accidentally juiced too many!

We took the crust out of the oven, measured the juice out, and zested a couple lemons with the cheese grater.

Then it was time for me to make the filling on the stovetop from the lemon juice and zest, sugar, butter, and lots of eggs. Once it was combined and thick, I poured it into the crust and put the tart back in the oven.

Then it was time to clean up and the girl was like, you got this, Jones? And I was like, what?

When the tart came out of the oven Sketch and Munch Munch came to see and they were like, wow!

I cut a slice and it was time for our taste test.

Munch Munch was like, is it supposed to be like this? The filling was really soft like pudding.

I was like, I have no idea I never made this before. Even the girl didn’t know.

When I boxed it up to put in the refrigerator I thought it looked like Pac-Man.

Later in the day when I went back in the kitchen I saw that Munch Munch left me a note. I thought that was so cool! He must have liked the tart after all.
